April coffee is a coffee shop and roastery in Copenhagen. The recipe yields a light and juicy coffee with low bitterness and good acidity.

13g
Medium-Coarse(25-27 clicks on Comandante)
Kenyan or Ethiopian

Water:

88°C / 190°F
200mL
  1. Put the paper filter in, rinse it and put it on the standard position. Pour the coffee in.
  2. Pour 50g of water in quickly, stir it a little, put the piston on to avoid dripping and wait till 0:30.
  3. Remove the piston, pour the remaining 150g of water in.
  4. Put the piston on, let it sit to 1:30.
  5. Press down slowly until 2:00, stop at the hiss.
