2019 Canadian AeroPress Championship - 1st Place

This winning recipe from the 2019 Canadian AeroPress Championship, credited to Ply P (@coffeewithply), is designed to highlight vibrant acidity in naturally processed coffees. It's best used with coffees that don’t already have high acidity, as the method can overwhelm delicate profiles—washed coffees often don’t perform as well.

Recipe Notes:

  • Coffee used at the championship: Reunion Coffee Roasters - El Salvador Natural from La Cancha Farm
  • 25 Clicks on Commandante
  • Paper Used: Double Kono Paper, hand cut, criss-cross.
  • Water used: 120ppm third wave water; 125g Initial brew/ 90g-110g Bypass

125 Initial / 90-110 Bypass mL
  1. Start with preparation for inverted method
  2. Add 25g of coffee
  3. Add 125g of 87°C of water, start timer
  4. Stir back and forth for 20 seconds
  5. At 1 minute, flip the Aeropress and plunge, stopping at hiss.
  6. Add 90-110g of water depending on desired strength
  7. Enjoy!
