2019 World AeroPress Championship - 2nd place
Straight from the World AeroPress Championships in London, here is the 2019 2nd place recipe, which uses a Pacas variety bean produced by Orlando Aguilar from El Salvador; roasted by Ozone Coffee Roasters in London.
Benja's delicious recipes has a 'pre-bypass', adding 110g of water into your server which you then press into.
If you are using a Commandante grinder, Benja recommends about 30 clicks for best results with his recipe.

A washed Pacas from El Salvador (as used in the WAC finals)
Water:
94°C / 201°F

- Add 35g of ground coffee into your AeroPress chamber.
- Add 100g of 94°c water into your server.
- Now add 100g of water onto your coffee in the AeroPress chamber.
- Stir for 15sec and then turbulent wiggle 10sec.
- At 1:15, put the filter cap on and flip the Aeropress.
- Use your elbow to press the Aeropress into the server for 30sec.
- Enjoy!
