2021 World AeroPress Championship - 2nd Place

This is the 2021 World AeroPress Championship 2nd place, recipe by Maru Mallee.

I wanted to share the recipe I submitted to the World AeroPress Championships, that got me 🥈 2nd place.

I hope people enjoy it, but remember that any competition recipe is dialed in specifically for the type of beans being used, so if you are going to use this recipe with different beans, please be ready to adjust the variables for a good extraction.

GRIND: #23clicks (Comandante Grinder)

WATER: 150ml @93C + 36ml ROOMTEMP bypass

WATER TYPE: 75% classic + 25% distilled

BREW TIME: 1:50 + 20sec press

Medium (23clicks on Comandante)
Light (Pablo Bamaca)

Water:

93°C / 199°F
150+36mL
  1. 0:00-0:12 Pour 150ml water @93C over the grinds.
  2. 0:12-0:25 Stir firmly x20.
  3. 0:25-0:30 Attach filter cap to brewer, press out any excess air, and place carafe on top.
  4. 1:50-1:55 Flip carafe and brewer, swirl x3 and tap down x2 (like a rao-spin).
  5. 1:55-2:15 Press, plunger should touch coffee puck with gentle pressure, but don't force.
  6. 2:15-2:20 Remove brewer and shake it gently, letting any last drops of coffee into the carafe.
  7. Add 36ml room temperature water as a bypass. Swirl the brew to cool, and serve.
