AeroPress with 2 separate extractions

The recipe was created by Eldric Stuart of Aubade Coffee (@aubadecoffee) in Vancouver.

The brewer in the video is Brodie Vissers (@thenomadbrodie). He used this recipe in April 2017 to win the Catalonia Regionals of Spanish AeroPress Championship.

What's special about this AeroPrecipe is you need to extract the coffee twice with the AeroPress. One shorter extraction followed by a longer second extraction. Then you add the first one to the second one. Don't add it all at once - start with 30ml, and add more depending on your taste.

The paper filter Brodie used for the AeroPress Championship is also created by Eldric. It's called 'Aesir Filter'. This paper filter is much thicker than the normal paper filter. It makes the coffee cleaner, brighter, more full bodied with less sediment and bitterness.

23g

Water:

89°C / 192°F
230mL
  1. Rinse the paper filter.
  2. Put the coffee in the upright AeroPress.
  3. Start timer, add 60 ml of water at 89 degrees celsius.
  4. Stir 3 times and press out in 30 seconds.
  5. Separate the extraction into another cup.
  6. Add 170 ml of water to the AeroPress.
  7. Put the plunger on and wait until 1:00.
  8. Press until 1:40, stop when you hear the hiss.
  9. Add first extraction back to second extraction to taste (start with 30 ml).
  10. You can add a little bit more water to finish for your taste.
