Matt Perger V60 Technique
Matt Perger’s V60 method is a simple, extraction-focused approach built around the idea that you can push coffee harder if the extraction is even. Rather than using lots of pours or complicated structure, it strips things back to a bloom and two main pours, and puts the emphasis on grind quality and agitation.
A key part of the method is grinding finer than usual for V60. The goal here is to increase extraction and bring out more sweetness and clarity, rather than playing it safe with a coarser grind. This only works if the grind is relatively uniform - fewer large particles means fewer under-extracted flavours muddying the cup.
Agitation does most of the heavy lifting. A strong bloom ensures everything is fully saturated early, helping avoid dry pockets and uneven extraction. From there, the pours keep things moving without overcomplicating the process, and a final tap settles the bed to encourage a clean, even drawdown.
In the cup, it leans toward clarity and brightness, with a higher extraction than most traditional V60 recipes. When dialed in, it’s clean, expressive, and surprisingly sweet, but it will show flaws quickly if your grind or technique is off.

Step 1.
0:00 - 0:30
Bloom with 50g of water. Stir thoroughly.
Step 2.
0:30 - 1:00
Pour another 50g. Pour in an outward spiral from the center
Step 3.
1:00 - 1:30
Pour the final 100g. Again, pour in a spiral from the center outwards.
Step 4.
1:30 - 2:20
Slightly lift the V60 and tap (drop) to level your grounds bed. Wait for the water to draw down. Then enjoy!
