On the Edge

This recipe is trying to surf the edge between over-extraction and getting the most intense flavor out of the bean. With all the recipes I liked so far I had to dial down on the amount of water, I suppose I am not a fan of the subtle, mild, and gentle flavors. Hence, this recipe.

**The grind is on the coarser side of fine, 15 clicks on the Commandante C40. **I actually used a metal filter over a paper one for fun, but a double or single paper is ok, up to your preference.

  1. Put 18g of coffee in the inverted AeroPress and wet the filter with hot water. (I also like to warm the cup, not necessary)
  2. Pour 50ml of 92C water and wait 30sec.
  3. Stirl 5 times, then pour 30ml of water and stir 2 more times.
  4. At 1:00 put the cap on.
  5. At 1:20 invert, and at 1:30 start pressing. You can play with the force and see how it changes the flavor (gentle press / as hard as you can).
