On the Edge
This recipe is trying to surf the edge between over-extraction and getting the most intense flavor out of the bean. With all the recipes I liked so far I had to dial down on the amount of water, I suppose I am not a fan of the subtle, mild, and gentle flavors. Hence, this recipe.
**The grind is on the coarser side of fine, 15 clicks on the Commandante C40. **I actually used a metal filter over a paper one for fun, but a double or single paper is ok, up to your preference.

- Put 18g of coffee in the inverted AeroPress and wet the filter with hot water. (I also like to warm the cup, not necessary)
- Pour 50ml of 92C water and wait 30sec.
- Stirl 5 times, then pour 30ml of water and stir 2 more times.
- At 1:00 put the cap on.
- At 1:20 invert, and at 1:30 start pressing. You can play with the force and see how it changes the flavor (gentle press / as hard as you can).
