Prismo Botanical
This recipe uses the Prismo mainly to avoid using the inverted method and keep the brew neat and tidy as we work. Also, I like to add a paper filter over the Prismo's metal one. It's useful to "block" too many oils, the guys at Télescope Café in Paris use this technique (and I love their coffee).
This is a first shot and is made to be tinkered with and improved.

Equipment:
- Prep - Measure 15 grams of coffee, and grind it to a medium coarse grind
- Prep - Attach the Prismo with a paper filter on top
- 00:00-00:45 Bloom the coffee by pouring 40g of water. Do not stir, just gently swirl the brewer if needed to wet the grounds evenly
- 00:45-1:15 Slowly pour the remaining water in a spiral until you get to 220g, keeping the stream as thin and delicate as possible
- 1:15-3:00 Put the plunger on top and let steep, leaving the brewer still
- 3:00-3:45 Press down as slowly as possible, you should feel no resistance. Stop as you start hearing the hissing sound
