Testu Kasuya's 10 Pour

This 10 pour recipe is Tetsu Kasuya's follow-up to his famous 4:6 Method, released to mark ten years since his World Brewers Cup win. It ignores most of what you'd expect from a pour-over recipe: grind coarser than feels sensible, keep the water properly hot, and pour ten times in a steady rhythm rather than a few big pours. The bloom gets its usual thirty seconds, then it's a small pour every fifteen seconds, letting the bed drain almost dry each time before the next one goes in. That constant, gentle turnover is what does the work - coaxing sweetness and body out of a coarse grind that would normally give you weak, sour coffee.

The result is a cup with real weight to it and a syrupy sweetness, almost no bitterness, and it opens up even more once it's cooled a little. The high water temperature isn't optional - it's what keeps extraction moving at that coarse grind, which is also why this doesn't suit darker roasts.

Save this recipe for something light-roasted that you like, and ensure you use a timer to keep the correct pace while pouring.

    Pour 30g and wait for 30 seconds

    0:30 - 0:45

    Add another 30g (total now 60g) and wait until 45 seconds

  3. Step 3 — Pour 3

    0:45 - 1:00

    Add another 30g (total now 90g) and wait until 60 seconds

  4. Step 4 — Pour 4

    1:00 - 1:15

    Add another 30g (total now 120g) and wait until 1:15

  5. Step 5 — Pour 5

    1:15 - 1:30

    Add another 30g (total now 150g) and wait until 1:30

  6. Step 6 — Pour 6

    1:30 - 1:45

    Add another 30g (total now 180g) and wait until 1:45

  7. Step 7 — Pour 7

    1:45 - 2:00

    Add another 30g (total now 210g) and wait until 2:00

  8. Step 8 — Pour 8

    2:00 - 2:15

    Add another 30g (total now 240g) and wait until 2:15

  9. Step 9 — Pour 10

    2:15 - 2:30

    Add another 30g (total now 270g) and wait until 2:30

  10. Step 10 — Pour 10

    2:30 - 2:45

    Add another 30g (total now 300g) and wait until 2:45

  11. Step 11 — Wait

    2:45 - 3:00

    Wait for water to finish drawing down - total time should be around 3:00
