Water:
94°C / 201°F

Equipment:
- Grind 27g of fresh coffee - preferably light to medium roast
- Wet paper filter
- Pour over 100gr hot water, then stir to saturate the grinds for 45 sec
- Top up to 220gr water, stir gently and start plunging
- Total time 2min to 2min 15sec
- Tare scales and add 80gr hot water to finish.
