I use double paper filters for this recipe.

Grind settings:

19-23 clicks on the Commandante seems to be the sweet spot.

Water:

95°C / 203°F
200mL

Equipment:

  1. Use double papers and fill brewer with 13 grams of coffee. Light shake to even the grounds.
  2. Pour 200 grams of water and make sure all the grounds are saturated.
  3. Use the plunger to make vacuum.
  4. Let steep for 30 seconds.
  5. Swirl the brewer for a few seconds.
  6. Let steep for 30 seconds.
  7. Press into the cup for about 30 seconds.
