Two for One

I've done about 30k of these over the years at the Brookfield Farmer's Market near Chicago. We usually have a queue, so it's important to brew fast. This requires a fine grind and rapid bloom suppression. I also generally press four at a time \(I'm 6'6" so I have a long forearm\).

For years I used spunbond polyester filters. In general, I consider polyester a better filtering medium by far than paper. This year I used paper again, as an experiment. This recipe works OK with paper, but better with polyester having a higher flow rate.

Using successive pours and a relatively high water volume means that wash\-through is not so consequential. As some water exits, more is added. This reduces the strength of the brew in the extraction chamber, effectively meeting the basic objective of a high water ratio normally denied the AeroPress by its dimensions.

As for the mini mixer, be sure to use only the plastic stirrer.

The Aeropress XL is relatively new to the market. This recipe is designed to replicate the successful brews that I have had on the Clever Dripper. The Clever Dripper brews in a way that is halfway between a cafetiere and a V60\-02.

The recipe is designed to act as a set of guidelines for successful brewing on the Aeropress XL. This is not a scientific Jonathan Gagne level brew, but can be tweaked according to taste.

AeroPress XL - Clever Dripper Style Brew

<div>This recipe will brew about 300mls. Enough for a thermos or to share with a friend. &nbsp;I wanted to achieve a good, even extraction with little fuss. I didn't want to fiddle with a scale, a precarious inverted method, or fumble with creating a vacuum.

It can be brewed with any type of kettle, perhaps a pot, or even a hot water spout at a gas station or convenience store.

What makes the AeroPress so unique and great apart from its ingenious design and compact size, is it creates a cup that is part percolation, part immersion, and part pressurized filter brew with no bypass or gimmicks resulting in a good, clean cup offering outstanding clarity and texture with ease. This technique is designed to be simple and efficient.

I like to use the included AeroPress coffee scoop. Yes I know, *GASP* volumetric measurement may be absurd to some but this technique is about ease and utilizing the tools provided not technical precision (though they both have their merits). I have found the AeroPress coffee scoop to yield ~17 g of speciality, light to medium roast coffee. Maybe less for darker roasts. If using a darker roast try grinding a bit coarser say medium fine or dropping the water temp.</div>

Volumetric AeroPress® for 2 (great for travel or camping)

With this recipe, I developed my favourite way to have an iced coffee. It is juicy, refreshing, and super aromatic cup.

I would recommend an anaerobic coffee but it's really up to you what you would like to use. Hope you enjoy it.

An Aeropress brew for two that a couple can enjoy. It's a light (low body) cup of coffee with a very sweet taste and almost no bitterness because of the short brewtime and oversaturation of the decoction.

This is our everyday brew, hybridized from the two WAC winners that we love (2017/2019) for methods, but the brew was too strong for us.

This AeroPress recipe was made thinking on the readily available, sometimes almost stale, very dark and cheap roasts. This type of coffee is the one you find at Walmart’s, Mexican supermarkets, etc...

Also, this works with a blade grinder, if like me, you can’t really afford a great burr grinder.

Tasting notes, on the coffee I used, which was Gila Master Blend, are almost banana like, a bit chocolate as well. But a very clean cup and a not so intrusive after taste.

I played a little bit around with the ways to control the extraction rate and this recipe was the best result for my personal taste.

I use Yirgacheffe from Coffee Circle \(light roasted\), but I think you can use any type of coffee.

This brewing method works best to bring the boozy-nectary sweetness from natural (or) honey-processed coffees. In fact, as someone who is fairly new to brewing coffee at home, it was while using this method that I first tasted the 'nectary-sweetness' in coffee and discovered it was way different from the 'sugary-sweetness' that I usually associated the taste of 'sweetness' to.

**<u>Dialing it in</u>**

No two coffees are the same; thus, there is room for adjustment when dialing in using this method. I've found the adjustment is best done in **Grind Size** and **Brew Time** while keeping the water temperature, amount of coffee, and the amount of water constant.

Nanyang coffee is a traditional coffee beverage found in Southeast Asia. The roasting process and preparation technique involves a variation of the Torrefacto method: butter and sugar are added to the beans.

You can buy the traditional beans online but be warned: you have to clean your grinder after every use to avoid damaging it. I instead use regular coffee beans or pre\-ground coffee to skip this hassle.

Nanyang coffee varies in style. Kopi C is one such variation and is composed of the following ingredients:

Here are some notes and tips to keep in mind:

- Cut two paper filters to fit inside the Aeropress chamber. Fold them a couple of times and use a circular template to help you. You can rinse and reuse these two auxiliary filters.
- Slightly wet your beans before grinding to reduce clumps and the coffee sticking to your grinder.
- Grind in the range suitable for espresso. Check out the [Honest Coffee Guide grind size chart](https://honestcoffeeguide.com/coffee-grind-size-chart/) for your grinder's sweet spot.
- When grinding, feed the beans into your grinder slowly to decrease particle size dispersion and reduce the fines. This is particularly important if your grinder isn't specifically designed for espresso, otherwise, clogging may occur. If you're using a hand grinder, tilt it sideways while grinding.
- Shake the grounds to distribute them evenly. Just pour them into the chamber, cover it, and give it a good shake.
- Keep a constant pressure on the piston while pressing.

Now, here's a heads up: you won't get any foam or crema. But don't worry, the magical flavor will make up for it.

The all new Comandante C40 Nitro Blade is an amazing precision grinding instrument. The advanced burr design and precision gives a consistent level of grind beyond expectations.

The burrs are a piece of art. Using high alloy and high nitrogen stainless steel the burrs are made on from one block of steel. Using german engineering of the highest order, the burrs are extremely tough, sharp, highly wear resistant and high degree of edge retention.

The centre axel is fixed and supported by two micro ball bearings for better distribution of force and grinding action.

The wooden knob is hand made from 100% natural oak wood. Gives a comfortable feel when grinding. Is finished with Wax Oil.

All plastic parts are made Tritan BPA free plastic.

The grind selection dial is a three legged star with click indentations to hold your chosen grind setting. Turn clockwise for finer grind and anti clockwise for coarser grind.

Its comes with 2 jars. One dark coloured glass jar with lid and one clear glass jar.

**📝 Recipe Notes:**

- Grind size: Slightly finer than pour\-over; 20 clicks on Comandante
- Filters: 2 paper filters, rinsed

**Key Points:**

- Our goal is to highlight the acidity and flavors of each coffee origin without any bitterness. This recipe works well regardless of roast date and degassing.
- The target Total Dissolved Solids \(TDS\) is 1.4~1.5 with a ratio of 16:235 \(16g coffee, 235ml water\).

**Why Aeropress is Recommended:**

- Aeropress is highly recommended for its versatility in trying different coffees and brewing styles. It allows for adjustments in TDS and Extraction Yield \(EY\) without compromising on taste.
- This brewing method is essentially an immersion brewer, making it a good alternative if you experience bitterness or astringency with pour\-overs.

**Steep Time:**

- The recommended steep time is around 1 minute 45 seconds. However, the ideal time depends on your grind setting and grinder. If using a fine grind, a shorter steep time is recommended.

**Slow Pressing is Key:**

- The pressing motion is crucial for achieving an even extraction with the Aeropress. It's important to press gently and consistently. Avoid pressing too hard, as this can cause over\-extraction due to uneven flow. Aim to finish the press just before it starts making a hissing sound.
- Using a paper or metal filter can help reduce the risk of side leaks towards the end of the brew when applying more pressure.

Here's an intriguing recipe that introduces an intermediate step: adding fresh coffee to the brew. It's certainly a departure from the traditional AeroPress method you're accustomed to.

I found this recipe by just trying something new. It gave me a sweet and high\-acidity cup of coffee.

I used a Tanzania single origin with a medium acidity from itself. I tried this recipe with a Colombian and a Dominican Republic single origin, which also gave me a nice cup of coffee.

T﻿his is the winning AeroPress recipe by Jibbi Little of Australia from the 2022 World AeroPress Championships, held in Canada.

T﻿here are a couple of new techniques from 22's [WAC](https://www.instagram.com/aero.press/) winning recipe that you will find interesting.

Firstly, Jibbi does a double grind for her beans. The first grind is in a very coarse setting s﻿o you can blow out the silver skins easily. After the second grind, she also sifted out the fines to reduce the bitterness that often comes from over\-extracted fines grounds.

S﻿econdly, she used 4 iced chilling balls to cool down the brew at the pressing phase. This will give you a smooth mouthfeel.

- D﻿ouble grind: 1st grind very coarse with Timemore; 2nd grind setting 4 with Kinu Classic \(around medium\-fine\); If you use washed process, grind slightly finer
- B﻿low out the silver skins after the 1st grind

It's an interesting recipe because he used two kinds of coffee grounds \-  28g coarse grounds and 1.5g very fine grounds. Also, double paper filters have been used to achieve a cleaner cup.

Lucas has provided us with some great, precise instructions for his championship winning AeroPress recipe, as quoted below (some of the detail below is missing from the video, so it's important to read):

" _It is best to choose Kenya coffee for this recipe but all washed coffees with high density will work fine._

_Grind size is a bit coarser than automatic espresso machine. Grind size is not a big deal cause people will have fixed other attributes so when you learn the recipe you should only vary grind size._

_I use 79 celsius water, but it is very important that you preheat all AeroPress parts for least 15 seconds with 79 C temperature_. "

Fast Brew for Everyday

<div>I'd been using the James Hoffmann protocol and was reading about long blooms to improve extraction. Since the bloom is so long, I went with an inverted set\-up so the water would not drip out during the bloom. I think it gives a nice rounded cup with all sorts of roasts.

📝 **R﻿ecipe Notes**

- I use 47 clicks on a 1Zpresso JX S Hand Grinder (30 clicks per revolution), about medium\-coarse
- I add a tiny pinch of salt to the coffee grounds
- P﻿reheat brewer and filter

Kind of putting together the concepts of a long bloom using an inverted James Hoffmann as the base.

Long Bloom Flip

We all had that one morning half asleep when out of nowhere the press seems to be so much easier...

Did you get stronger overnight? Sadly no, you just put your filter wrong and now half of the grounds are in your cup. What a mess.

But let's not throw the coffee just yet 🌚 just put a new paper and awkwardly pour your coffee puree into the AeroPress again to re\-filter it.

It won't be as good as your normal cup but... Oh wait... What is happening... Is this...? But how can it be?

Coffee brewed using ice generally presents brighter taste, thus using tap water for a long brew time allows a similar effect.

F﻿or this recipe, use water straight out of a tap, or bottle, at room temperature.

T﻿his is a long brew \(8 hours\), a great one to setup before bed and have it waiting for you when you wake up.

This is inspired by the latest winning V60 recipe of the World Brewer's Cup.&nbsp;</div><div><br></div><div>If you have a Melodrip, use it, this recipe uses a droplet style pour technique to avoid excessive fines migration and to get a more uniform bed.</div>

A semi-pour-over technique consisting of multiple pours. It produces a complex, sweet and clean cup.

An easy and quick single\-cup method with a minimal, travel\-oriented setup.

The fast extraction produces a juicy and balanced cup, with a very smooth aftertaste thanks to the metal filter and the nearly V60 ratio \(1:16\).

- I use 30 clicks on the 2022 1ZPresso Q2 \(Heptagonal\), 1 full rotation from zero. It's quite fine \(almost in the espresso range\).
