Zero Fuss Quick “Latte”

When using a flask, be aware of these few things as Ales from European Coffee Trip mentioned in their blog:

This is based off me sifting through countless recipes, and finally just throwing my hands up and doing things myself. I have no real knowledge as to what happens when coffee is brewed, I just know what I like, and I like this cup. Maybe you will too!

I don't have a proper kettle or temp, just a scale and a timer, and, if done right, will give you a nice, full-bodied, not-too-bitter morning cup.

Mango Jambo

Tetsu Kasuya’s Devil Recipe for the Hario Switch has been my go\-to lately, and I wondered how well it would translate to the AeroPress. After dusting mine off and giving it a try, I was surprised by the outstanding results. This adaptation stays almost identical to the Hario Switch version, with only minor tweaks. 

The method utilises the AeroPress as a flat\-bottom brewer in the first stage, then cools the water to 170°F/ 77°C for a traditional immersion and plunge in the second stage.

This recipe is the closest I’ve come to creating a cup that looks and tastes like espresso—and it even has crema\! 

Using a Prismo, two wet paper filters, dark roast coffee, and a slightly coarser espresso grind $8 clicks on the Timemore C3$, this method delivers a bold and rich flavour. Brewed with boiling water, the coffee isn’t very hot, so it’s best enjoyed right after brewing.

This AeroPress recipe is as close to espresso as it gets, offering bold flavours and a satisfying crema.

Closest thing to Espresso with Prismo

Occasionally I will use a metal filter and/or the flow control cap. The process always seems to result in a very nice cup of coffee, although changing these variables obviously makes a big difference in flavor.

Now, I am by no means a coffee expert but here's what I've discovered based on my experiences:

- Paper filter & standard cap \- Sweeter, fruitier flavor with smooth mouthfeel
- Paper filter & flow control cap \- Heightened dark chocolate flavor, a bit more of a bite than with the standard cap, but still pretty smooth overall.
- Metal filter & standard cap \- Usually slightly acidic $but not overly so$, with a much sharper overall flavor.
- Metal filter & flow control cap \- This combination results in the most dark chocolate\-like flavor, similar to the previous point but without nearly as much acidity.

I enjoy all of these combinations, but the two I most regularly make would be the paper filter & standard cap and the Metal filter & flow control cap.

My go-to recipe for a perfect morning coffee, plus tips for using different filter and cap combinations.

My Go-To Cup (and Tips for Different Filter/Cap Combinations)

Tip 1: Press Slower:

- A slow press yields a clean, clear brew with a better mouthfeel compared to a fast press, which results in a thicker but harsher cup.
- A fast, hard press introduces colloids and undissolved compounds, leading to bitterness and rough texture.
- Let the coffee bed act as a natural filter to retain undesirable compounds.

Tip 2: Bloom Your Coffee:

- Blooming doesn't matter as much if you are doing the inverted method.
- However, when you are brewing in a typical way, this ensures even saturation, leading to more efficient extraction and a more flavorful brew. Without blooming, under\-extracted liquid can drip into the cup, diluting the flavor.
- When you are doing the bloom, some minimal amount of water will drip through, but since the bed absorbs twice its weight in water.
- Add a small amount of water to wet the coffee grounds $just enough to saturate them fully$. Allow the coffee to bloom for **45 seconds** before adding the rest of the water.

Tip 3: Adjust Grind Size:

- Fine grind can result in uneven flow, astringency, and harsh flavors
- Start with a **coarser grind**, closer to French press or pour\-over grind size. Then move finer until you find a sweet spot.
- With a coarser grind, just let the brew sit longer.

Bonus advice:

- Using very hot water $95–100°C$ increases bitterness and harshness.
- Lance personally never goes pass 95°C
- For **light roasts**, use water at ~90–92°C.
- For **medium roasts**, use ~88°C.
- For **dark roasts**, use ~82–84°C.

T﻿here are a couple of new techniques from 22's [WAC](https://www.instagram.com/aero.press/) winning recipe that you will find interesting.

Firstly, Jibbi does a double grind for her beans. The first grind is in a very coarse setting s﻿o you can blow out the silver skins easily. After the second grind, she also sifted out the fines to reduce the bitterness that often comes from over\-extracted fines grounds.

S﻿econdly, she used 4 iced chilling balls to cool down the brew at the pressing phase. This will give you a smooth mouthfeel.

I used this recipe in the 2017 IAC and at that time I won third place.

The recipe is quite consistent and can be used in all types of coffee beans provided.

This recipe includes a bypass, and although the latest WAC regulations do not allow a bypass / dilution, to get a delicious and easy cup of coffee this recipe is worth a try.

Yusuke Narisawa won the 2nd place at 2017 World AeroPress Championships in Seoul, Korea with this recipe.

It's an interesting recipe because he used two kinds of coffee grounds \-  28g coarse grounds and 1.5g very fine grounds. Also, double paper filters have been used to achieve a cleaner cup.

Paulina 'Panda' Miczka's winning AeroPress recipe from the 2017 World Aeropress Championships in Seoul, Korea.

Even though this recipe uses 35g of coffee, that is for two people. If you want to make it a bit less, use 24g of coffee for 100ml of water, and after pressing add around 120ml of water.

Lucas has provided us with some great, precise instructions for his championship winning AeroPress recipe, as quoted below (some of the detail below is missing from the video, so it's important to read):

" _It is best to choose Kenya coffee for this recipe but all washed coffees with high density will work fine._

_Grind size is a bit coarser than automatic espresso machine. Grind size is not a big deal cause people will have fixed other attributes so when you learn the recipe you should only vary grind size._

_I use 79 celsius water, but it is very important that you preheat all AeroPress parts for least 15 seconds with 79 C temperature_. "

I often need to brew for 2\-3 people and I enjoy the convenience of the small AeroPress Go while travelling so I wanted to develop a recipe that tastes good after dilution and still be somewhat modifiable depending on what you are brewing with. This is a work in progress so I’m very open to critique\!

- Tip: Before plunging, lift your brewer about 2cm from your server or cup, and drop it back down. This can help settle the coffee and prevent channelling.

Two for One

I've done about 30k of these over the years at the Brookfield Farmer's Market near Chicago. We usually have a queue, so it's important to brew fast. This requires a fine grind and rapid bloom suppression. I also generally press four at a time $I'm 6'6" so I have a long forearm$.

For years I used spunbond polyester filters. In general, I consider polyester a better filtering medium by far than paper. This year I used paper again, as an experiment. This recipe works OK with paper, but better with polyester having a higher flow rate.

Using successive pours and a relatively high water volume means that wash\-through is not so consequential. As some water exits, more is added. This reduces the strength of the brew in the extraction chamber, effectively meeting the basic objective of a high water ratio normally denied the AeroPress by its dimensions.

As for the mini mixer, be sure to use only the plastic stirrer.
